Cream Cheese Stuffed Rolls

This delicious bread stuffed with cream cheese is perfect to accompany any meal

Makes 8 Rolls
Time 7 Hours (30 Min Active Time, 6.5 Hours Passive Time)
Ingredients Baker's Percentages
400 grams (2 ½ cups) Bread Flour 100%
240 grams (1 cup) Milk 60%
100 grams (1/3 cup) Sourdough Starter 25%
50 grams (1 large) Egg 12.5%
60 grams (4 ¼ tbsps) Butter 15%
8 grams (2 tsp) Salt 2%
Filling
240 grams (8 oz) Cream Cheese
Directions
Pour the milk in the bowl of a stand mixer, add the egg and sourdough starter. Fit the stand mixer with the hook attachment and mix until the ingredients are well incorporated. Add the bread flour, knead the ingredients until all the flour is well incorporated with the dough. Add the butter at room temperature cut in pieces. Add the butter little by little as you keep mixing the dough. Add the salt and keep kneading the dough in your stand mixer for about 30 minutes or until it is soft and elastic. Place the dough on your working table, stretch and fold it to add more tension and form a ball. Place it in a greased bowl and cover it with a plastic wrap or a plastic lid and let it ferment in a warm place until it doubles in size or in the fridge overnight.
Divide the dough in 8 equal pieces, make balls with the dough, cover them with a towel and let the dough rest for about 10 minutes. After 10 minutes, dust the dough with flour press the dough with your hands and then use a rolling pin to extend the dough into an 8 inch or 20 cm diameter circle.
Place 1 ounce or 30 grams of cream cheese in the middle of the dough. Cover the cheese with the dough and make a ball of dough, shape the dough in your hands and form a ball. Place the dough on a prepared baking sheet with parchment paper or a silicone mat. Cover the dough with a plastic lid or plastic wrap and let the dough rest at room temperature for a couple hours
Brush the dough with egg wash and sprinkle some sesame seeds. I like to use white and black sesame seeds for a better look. Place the rolls in a preheated oven at 350 degrees Fahrenheit or 180 degrees Celsius for about 35 minutes or until they are golden brown. As soon as you take them out of the oven place it on a cooling rack and let them cool off for at least 30 minutes.

Vierta la leche en el tazón de una batidora, agregue el huevo y la masa madre. Coloque la batidora con el accesorio de gancho y mezcle hasta que los ingredientes estén bien incorporados. Agrega la harina de pan, amasa los ingredientes hasta que toda la harina esté bien incorporada con la masa. Añadir la mantequilla a temperatura ambiente cortada en trozos. Agrega la mantequilla poco a poco mientras vas mezclando la masa. Agregue la sal y siga amasando la masa en su batidora durante unos 30 minutos o hasta que esté suave y elástica. Coloca la masa en tu mesa de trabajo, estírala y dóblala para añadir más tensión y formar una bola. Colóquelo en un recipiente engrasado y cúbralo con una envoltura de plástico o una tapa de plástico y déjelo fermentar en un lugar cálido hasta que duplique su tamaño o en el refrigerador durante la noche.
Divida la masa en 8 partes iguales, haga bolitas con la masa, cúbralas con un paño y deje reposar la masa durante unos 10 minutos. Después de 10 minutos, espolvorea la masa con harina, presiona la masa con las manos y luego usa un rodillo para extender la masa en un círculo de 8 pulgadas ó 20 cm de diámetro.
Coloque 1 onza ó 30 gramos de queso crema en el medio de la masa. Cubre el queso con la masa y haz una bola de masa, dale forma a la masa en tus manos y forma una bola. Coloque la masa en una bandeja para hornear preparada con papel pergamino o un tapete de silicona. Cubra la masa con una tapa de plástico o una envoltura de plástico y déjela reposar a temperatura ambiente durante un par de horas.
Barnice la masa con huevo batido y espolvoree algunas semillas de sésamo. Me gusta usar semillas de sésamo blancas y negras para una mejor apariencia. Coloque los rollos en un horno precalentado a 350 grados Fahrenheit o 180 grados Centígrados durante unos 35 minutos o hasta que estén dorados. Tan pronto como los saque del horno, colóquelos en una rejilla para enfriar y déjelos enfriar durante al menos 30 minutos.

While a Rolex 4113 is potentially a million-dollar watch, the Universal is no slouch on the market either.
