Oklahoma Onion Burger

This incredibly juicy burger will become one of your favorites!

Makes 8 Buns
Time 8 Hrs ( 30 min Active Time, 7.5 Hours Passive time)
Ingredients Baker's Percentages
400 grams (3 ¼ cups) Bread Flour 100%
220 grams (1 cup) Water 55%
50 grams (1 large) Egg 12.5%
100 grams (⅓ cup) Ripe Sourdough Starter 25%
30 grams (2 tbsps) Butter* 7.5%
8 grams (2 tsps) Salt 2%
*at room temperature cut in pieces
Directions
Pour the water, egg, sourdough starter and flour in the bowl of a stand mixer. Knead the ingredients until all the flour is well incorporated with the dough. Then add the butter at room temperature cut in pieces, little by little as you keep mixing the dough, finally add the salt.
Place the dough on your working table, stretch and fold it to add more tension and form a ball. Place it in a greased bowl and cover it with a plastic wrap or a plastic lid and let it ferment in a warm place until it doubles in size. I usually ferment the dough in my dough proofer to speed up the process at 90 degrees Fahrenheit, 32 Celsius for 4 hours.
Take the dough out of the bowl, place it on your working table and stretch and fold it to make a ball of dough again, divide the dough in 8 equal pieces, I recommend you to use a food scale to get equal size pieces of dough. Shape the dough and make balls of dough. Place the balls of dough on a prepared baking sheet with parchment paper or a silicone mat and cover the dough with a plastic lid or a plastic wrap and let the dough proof in a warm place for another 2 hours
Brush the dough with egg wash, to make this egg wash just mix 1 egg with ½ a tsp of water. Cover all the dough well with the egg wash you can add sesame seeds on top of the dough if you want.
Place the dough in a preheated oven at 375 degrees Fahrenheit or 180 degrees Celsius for about 30 minutes or until the bread is golden brown. Take the bread out of the oven and place it on a cooling rack as soon as possible.
