Fresh Homemade Pita Bread is fragrant, delicious and better than any store-bought

This is a very easy and quick recipe to make
Makes 8 Pita Breads
Time 5 Hours
Ingredients Baker's Percentages
340 grams (2 ¾ cups) All Purpose Flour 85%
60 grams (½ cup) Whole Wheat Flour 15%
160 grams ( ¾ cups) Sourdough Starter 40%
220 grams (1 cup) Water 55%
20 grams (1 ½ tbsps) Extra Virgin Olive Oil 5%
10 grams ( ½ tbsp) Sea Salt 2.5%

Directions
Pour the water, extra virgin olive oil, and sourdough starter into a mixing bowl. Mix well with a dough whisk until the sourdough starter dissolves in the water . Add the whole wheat flour, all purpose flour, sea salt and until your dough starter to some together, then use your hand to knead inside your bowl for a minute or two until there are not dry spots remaining in the dough. Get the dough out of the bowl and start kneading it by hand for about 15 to 20 minutes until the dough starts to get soft and elastic. When the dough is ready, form a ball with your hands and place it in a greased bowl, cover the dough with a plastic lid or plastic wrap and let the dough ferment in a warm place for at least 4 hours or until in doubles in size.
Stretch and fold the dough on itself to degass it and form a ball again to portion it. Use a dough scraper to divide the dough in 8 equal pieces, make balls with your dough and make sure to add tension to the dough as you are rolling the dough on your work table. Place the balls of dough on your table and let them rest for about 10 minutes covered with a kitchen towel.
Pre heat your oven at 450 degrees Fahrenheit or 230 degrees celsius with a pizza steel, cast iron pan or cookie sheet inside. To form your Pita Breads use a rolling pin to start stretching the dough from the center of the dough to the outside extremes of the dough. The secret to maintain a circular shape is to not let the rolling pin get to the edge of the dough and just keep rolling the dough as you keep rotating the dough. You have to roll the dough until it is thin so that the pita bread cooks perfectly the diameter of the pita bread should be around 6 inches.
Place the dough on a prepared baking sheet with parchment paper or a silicone mat and cover it with a plastic lid or a wet kitchen towel so the dough doesn't dry up. Ideally you want to roll your dough as you are baking them but if you prefer to roll them in advance this is the way to do it.
Place the dough on the cast iron pan or cookie sheet and wait until the dough fully inflates. When this happens you will know that your dough is fully cooked inside. Now just flip the pita bread and let it cook for about 1 or 2 more minutes on the other side
Place the pita breads on a cooling rack and they will be ready to be eaten after 10 minutes.

340 gramos (2 ¾ tazas) Harina multiusos 85%

20 gramos (1 ½ cucharada) de aceite de oliva virgen extra 5%
10 gramos (½ cucharada) de sal marina 2.5%

Vierta el agua, el aceite de oliva extra virgen y la masa madre en un tazón. Mezcle bien con un batidor de masa hasta que la masa madre se disuelva en el agua. Agregue la harina de trigo integral, la harina para todo uso, la sal marina y mezcle hasta que la masa comience a formar un poco, luego use su mano para amasar dentro de su tazón durante uno o dos minutos hasta que no queden manchas secas en la masa. Saque la masa del tazón y comience a amasarla a mano durante unos 15 a 20 minutos hasta que la masa comience a ponerse suave y elástica. Cuando la masa esté lista, forme una bola con las manos y colóquela en un bol engrasado, cubra la masa con una tapa plástica o film transparente y deje que la masa fermente en un lugar cálido durante al menos 4 horas o hasta que duplique su tamaño.
Estire y doble la masa sobre sí misma para desgasificarla y vuelva a formar una bola para dividirla. Use un raspador de masa para dividir la masa en 8 partes iguales, haga bolas con la masa y asegúrese de agregar tensión a la masa mientras la enrolla en su mesa de trabajo. Coloque las bolas de masa sobre su mesa y déjelas reposar unos 10 minutos cubiertas con un paño de cocina.
Precaliente su horno a 450 grados Fahrenheit ó 230 grados centígrados con un acero para pizza, una sartén de hierro fundido o una bandeja para hornear galletas adentro. Para formar sus panes de pita, use un rodillo para comenzar a estirar la masa desde el centro de la masa hacia los extremos exteriores de la masa.El secreto para mantener una forma circular es no dejar que el rodillo llegue al borde de la masa y simplemente seguir enrollando la masa mientras continua girando la masa. Coloque la masa en una bandeja para hornear preparada con papel pergamino o un tapete de silicona y cúbrala con una tapa de plástico o una toalla de cocina húmeda para que la masa no se seque. Lo ideal es que estire la masa mientras la hornea, pero si prefieres estirar la masa con anticipación, esta es la forma de hacerlo.
Coloque la masa en la sartén de hierro fundido o la bandeja para hornear galletas y espere hasta que la masa se infle por completo. Cuando esto suceda, sabrá que su masa está completamente cocida por dentro. Ahora simplemente voltee el pan de pita y déjelo cocinar durante 1 o 2 minutos más por el otro lado.
Coloque los panes de pita en una rejilla para enfriar y estarán listos para comer después de 10 minutos.
