Sourdough Pizza Recipe

General Info

Makes: 2 10-12 inch pizzas

Time: 15 min prep, 2-4 hours rising, 8 min cooking


Ingredients


Dough

2 1/2 cups (298g) All-Purpose Flour

1 cup (241g) sourdough starter, unfed/discard

1/2 cup (113g) warm water

2 tbsp of extra virgin olive oil

1 teaspoon salt

1/2 teaspoon active dry yeast


Sauce

1 can of whole peeled San Marzano Tomatoes

1 tsp salt

4 to 5 Basil leaves (if not already included in your cab of tomatoes)


Toppings

250 gr Fresh Mozarella Cheese

10 Fresh Basil leaves

Directions

  1. Pour ½ a cup of warm water in a bowl, add 2 tablespoons of extra virgin olive oil add 1 cup of sourdough starter and ½ a teaspoon of active dry yeast.

  2. Add 2 ½ cups of all purpose flour and a teaspoon of salt. In a Stand Mixer, mix your ingredients with a dough whisk until they are all combined. Knead for about 7 minutes by hand until the dough doesn’t stick to your table anymore.

  3. Place the dough in a greased container, cover and let rise until almost doubled in bulk. Depending on the vitality of your starter, this will take between 2 and 4 hours. For a faster rise, place the dough in a warm spot or double the yeast.

  4. Make two balls and let them rest for another hour covered with plastic wrap.

  5. Flour a surface and start pressing your dough from the middle to the edges. Avoid pressing the edges.

  6. Once your dough reaches the desired size between 10 to 12 inches sprinkle some semolina flour or cornmeal onto a pizza peel and transfer your dough onto the peel.

  7. Put enough sauce on your dough to cover the entire pizza and add fresh mozzarella cheese in pieces

  8. Sprinkle extra virgin olive oil over the pizza and add basil on top

  9. Traster your pizza to a 500 degree preheated oven with the pizza steel in the lowest rack. Be sure to let your pizza steel heat up at least 45 minutes before you start cooking your pizza.

  10. Cook your pizza until your cheese is melted and the crust starts browning between 8 to 10 min.

  11. If you desire a darker finish place your pizza under the broiler for 1 minute.


Sauce

Blend your tomatoes with the basil leaves and salt.
