Sourdough Liege Waffles

These Waffles are caramelized and buttery, reminiscent of a croissant, doughnut and brioche all all in one! They are delicious and easy to make, perfect for breakfast or a dessert!

The key ingredient in Liege Waffles are the smooth pearls of sugar that add pops of sweetness and give the outside a crispy, caramelized bite.

Makes 10 Waffles

Time 12 Hours approximately


Ingredients

100 grams (1/2 cup) Milk

90 grams (1/3 cup) Water

2 Eggs

15 grams (1 tbsp) Vanilla Essence

75 grams (2 tbsp) Honey

45 grams (3 tbsp) Light Brown Sugar

100 grams ( 3/4 cup) Sourdough Starter

5 grams Salt

450 grams (3 2/3 cups) Bread Flour

350 grams (2 Sticks) Butter

250 grams (1 1/2 cups) Pearl Sugar


Directions

  1. In the bowl of your stand mixer combine warm milk, warm water, eggs, vanilla essence, light brown sugar, honey and sourdough starter. Start mixing and when your ingredients are incorporated add the flour. Mix until your ingredients are well incorporated.

  2. Start adding the butter little by little and mix until the dough starts to pull off from the walls of the bowl. Cover your dough with plastic wrap and let it sit overnight in the fridge.

  3. The next morning, get your dough out of the fridge and while it is still cold add the pearl sugar. Press the sugar into the dough. Get the dough out of the bowl and place it on a pastry mat.  Divide the dough into 10 equal pieces. Make balls with your hands and set them aside.

  4. Cook your waffles on the high setting of your waffle maker for 4 to 5 minutes until the sugar caramelizes.

  5. You can dress up your waffle with whipped cream, chocolate, strawberries, powdered sugar or they are also delicious plain.
